Tips for storing tea in summer

When summer comes, the weather is getting hotter day by day. We must pay more attention to heatstroke prevention and cooling on weekdays!

In fact, in this hot summer, in addition to paying attention to heatstroke prevention, tea also needs to take some heatstroke prevention measures.


1.Pay attention to the storage temperature

According to relevant experiments, the content of polyphenols in tea stored at room temperature for one year decreased by 2.45% and the moisture content increased by 1.41%; However, when the tea was stored at 0~5 ℃ for one year, the content of polyphenols decreased by only 1.53% and the moisture content increased by only 0.23%.

In addition, under normal circumstances, the speed of tea browning will increase 3-5 times when the temperature increases by 10 ℃.
Therefore, controlling the temperature of tea storage environment below 10 ℃ can effectively inhibit the browning process of tea, and when the temperature reaches -20 ℃, theoretically even completely prevent the deterioration of tea quality.
Therefore, when storing tea in summer, we only need to remember one point: the storage environment of 0 ℃ ~5 ℃ is the most suitable.


2.Pay attention to storage humidity
Summer is hot and humid, and it is also a rainy season. Especially in the plum rain season in the south, rain will bring a lot of moisture, which will bring a lot of trouble to store tea.
Generally speaking, the water content of tea is below 6%, and the quality of tea is relatively stable; When the moisture content exceeds 8%, the tea is easy to age; When the water content exceeds 12%, the tea is very easy to mildew.
In addition, when the water content of tea is about 3%, the water molecules in tea are in a monolayer state, which is equivalent to coating tea with a protective film, thus slowing down the oxidation rate.

Therefore, when storing tea in summer, special attention must be paid to the humidity of the environment. Tea should not be placed in places with excessive humidity. At the same time, it should be stored off the ground and wall. In addition, it is necessary to regularly drain the humidity in the storage room.
Here is a small way to judge the approximate humidity of tea: when the water content of tea is 3%~5%, holding the tea in your hand will make you feel like holding your hand, and you can easily twist it into tea powder.



3.Pay attention to proper ventilation

It is necessary to pay attention to ventilation when storing tea, especially in summer.
Because if the dryness of the tea itself is not enough, and the ventilation is poor, it is easy to cause mold from the inside of the tea, which is not conducive to health when drinking.


4.Avoid direct sunlight

During tea storage, light will oxidize the tea pigments and lipids. The tea stored in glass containers or transparent plastic film bags will produce what we usually call "Sun flavor" due to ultraviolet radiation, which will affect the quality of tea.
Therefore, in addition to the storage environment, the packaging of tea also needs to be protected from light.
When storing tea in summer, the method of three-layer packaging can be adopted, that is, the method of layer by layer sealing such as plastic bags, aluminum bags and cartons.

Because the carton is dark and has good insulation performance, it is not easy to conduct heat, which can protect the tea from many external factors that are not conducive to the storage of tea.


5.Pay attention to storage methods

I believe that every tea friend will have his own tea storage methods, and the common tea storage methods in our family mainly include: tile jar storage method, iron tin storage method, hot water bottle storage method, low temperature storage method, etc.
1.1 tile jar storage method: wrap the tea with kraft paper (the moisture content is not more than 6%), place the tea bag around the high-quality ceramic jar, place the block lime bag in the middle (the size depends on the number of tea leaves), and pad the cover with cotton or thick soft straw paper to reduce air exchange.
2.1tin storage method: put dry tea leaves into tin with double covers and try to fill it up to reduce air. After installation, cover the cover and seal the gap with adhesive tape. Two more layers of plastic bags can be set outside to tie the bag mouth tightly to avoid contact with peculiar smell.
3.1 storage method of hot water bottle: the hot water bottle has good heat insulation and moisture-proof effect. After putting the tea into the hot water bottle (as full as possible), plug the bottle, seal it with wax, and wrap it with adhesive tape to ensure the container is sealed.

4.1 low temperature storage method: put the tea into the storage container and put it into the refrigerator, and use the low temperature to further ensure the stability of tea quality. It is better to store tea in a special refrigerator. If it must be refrigerated together with other foods, the tea should be properly packed and completely sealed to avoid odor absorption.
5.1 it is better not to freeze the tea when it is placed in the refrigerator, because the tea contains about 6% water, which will freeze below zero. When the tea is taken out of the refrigerator, the temperature will suddenly rise, and the cells will be destroyed, thereby damaging the tea, which is not conducive to preservation.
